Maine Blueberry Cake

1 1/4 cups blueberries, fresh or frozen dry

2 eggs

2 tablespoons all-purpose flour plus 2 cups all-purpose flour, sifted

1 cup sugar

2 teaspoons baking powder

1/2 cup butter or margarine

1/4 cup sugar

1/4 teaspoon nutmeg

Combine blueberries and 2 tablespoons flour, toss and set aside. Cream together with electric mixer at high speed the butter and cup of sugar. Continue beating and add the eggs. Slowly add the 2 cups of flour and baking powder, beating slowly only until the mixture is barely combined. Fold in the floured blueberries. Pour the batter into a 13x9x2 inch lightly greased pan. Sprinkle top with the combined sugar and nutmeg. Bake in a 350 degree oven for 35 minutes, or until cake tester comes out clean and dry. Can be served directly out of pan, warm with butter. If to be used for dessert, serve with whipped cream or yogurt. Yield: 12 servings.
